Contributions to a new Food Culture
Welcome to the Forum for Holistic Vegetarian Cooking Art. We are an initiative dedicated to deepening our relationship with food and food crops, thereby contributing to a new food culture. To this end, we meet once a month online in the Telegram group Holistic Vegetarian Cooking Art, as well as in person in the small village of Lundo in Trentino, Italy. There—in collaboration with spiritual teacher Heinz Grill—we explore a healing and aesthetic culinary art, particularly in the contemporary preparation of the seven grains and buckwheat. Furthermore, we develop menus and recipes for a holistic and vegetarian culinary culture. We also explore salad culture, harmonious protein combinations, the preparation of vegetables with consideration for their characteristic vitality—or rather, their ethereal structure—and, last but not least, the diverse applications of BackNaturFerment—all of these are areas we focus on.
Humanities and Natural Sciences
Udo Renzenbrink’s insights into the seven types of grains form a foundation for this research and learning, as do Heinz Grill’s vivid descriptions in the book Nutrition and the Giving Power of Human Beings. But of course, we do not neglect scientific findings and incorporate an understanding of the principles of various dietary approaches—such as macrobiotics, Ayurveda, the Mediterranean diet, and others—into our exploration. We regularly present the results of our research on our blog.
Nutrition and Peacework
We also look beyond our own horizons and take an interest in the culinary traditions of other countries—whether India, Georgia, or Argentina, to name just a few. Our experiences during the 2024 Artists’ Days, as well as during two trips to Romania, have shown that an appreciation for other countries can be directly linked to a spirit of peace.

Nutrition and World Hunger
We believe that a modern approach to nutrition cannot be separated from ecological and economic principles. The use of local products, a preference for organic quality, mindful handling of food, careful planning of purchases, and efficient storage are additional areas we are working on, in the belief that these efforts can have a positive impact on the global hunger situation.
Visit, Internship, Training
Anyone interested in participating in this program and learning about holistic vegetarian cuisine can sign up for a brief introductory session—for example, as part of a vacation in Italy—or for a focused internship lasting three to ten days. Those who wish to deepen their knowledge after the internship have the opportunity to enroll in a one-year introductory course in Holistic Vegetarian Culinary Arts.
Recovery and Nutrition
Beyond exploring food, learning to cook, and teaching the art of cooking, we’d like to warmly invite anyone who needs to recharge—perhaps because they’ve just recovered from a serious illness or a long period of stress: In collaboration with Sun Oasis Naone, we offer one-week rejuvenation stays under medical supervision. A healing, aesthetic, fortifying, centering, and restorative diet is an essential pillar of any recovery phase.
Our website is still under construction, but there’s a lot going on! So please check back soon and recommend the site to your friends and acquaintances.
Warm regards,
The Lundo Research Kitchen Team
